  • 1.75 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 0.75 cup vegetable oil
  • 2 large eggs
  • 1.5 cups pumpkin puree
  • 0.25 cup milk
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line a 9x5-inch loaf pan.
  2. Whisk together flour, baking soda, baking powder, salt, and spices.
  3. Whisk sugars and oil in a large bowl. Add eggs and mix well.
  4. Stir in pumpkin puree, milk, and vanilla.
  5. Fold in dry ingredients until no flour streaks remain.
  6. Pour into loaf pan and bake 55–65 minutes.
  7. Cool before slicing and serving.
