- Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
- Whisk almond flour, baking soda, and salt together.
- Cream butter and sugar-free sweetener until fluffy.
- Add egg and vanilla extract, mixing well.
- Mix dry ingredients into wet ingredients.
- Fold in sugar-free chocolate chips.
- Scoop dough onto baking sheet and flatten slightly.
- Bake for 10–12 minutes and cool before serving.

Cookies firm up as they cool; do not overbake.
