Ingredients
  

  • 2 cups almond flour
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar-free sweetener
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.75 cup sugar-free chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Whisk almond flour, baking soda, and salt together.
  3. Cream butter and sugar-free sweetener until fluffy.
  4. Add egg and vanilla extract, mixing well.
  5. Mix dry ingredients into wet ingredients.
  6. Fold in sugar-free chocolate chips.
  7. Scoop dough onto baking sheet and flatten slightly.
  8. Bake for 10–12 minutes and cool before serving.

Notes

Cookies firm up as they cool; do not overbake.
