Ingredients
  

Stew Base
  • 1.5 lb lean ground beef
  • 1 tbsp olive oil optional, if beef is lean
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 15 oz diced tomatoes
  • 2 tbsp tomato paste
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 2 celery stalks, diced
  • 1 cup frozen peas optional
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp flour optional, for thickening
  • Fresh parsley, chopped for garnish

Equipment

  • Large pot or Dutch oven

Method
 

  1. Brown ground beef in a large pot until no longer pink; drain excess fat.
  2. Add onion and garlic; sauté until softened.
  3. Stir in tomato paste and Worcestershire sauce.
  4. Add broth, diced tomatoes, potatoes, carrots, celery, thyme, paprika, salt, and pepper.
  5. Bring to a boil, reduce heat, and simmer for 35–40 minutes.
  6. Thicken with flour slurry if desired; add peas and cook 5 minutes more.
  7. Garnish with fresh parsley and serve warm.
