Ingredients
  

Main Ingredients
  • 4 fillets tilapia
  • 2 tablespoons olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 12 ounces roasted red peppers drained
  • 0.5 cup chicken or vegetable broth
  • 0.25 cup heavy cream
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon dried oregano

Equipment

  • Skillet
  • Blender or immersion blender

Method
 

  1. Season and pan-sear tilapia until lightly golden. Remove and set aside.
  2. Sauté onion and garlic, then add roasted peppers and broth.
  3. Blend sauce until smooth and return to skillet.
  4. Stir in cream and seasonings and simmer gently.
  5. Return fish to sauce and warm through before serving.

Notes

Keep heat low after adding cream to maintain smooth sauce.
