Ingredients
  

  • 1 large bag tortilla chips
  • 1 lb ground beef or chicken/turkey
  • 1 packet taco seasoning
  • 1 cup black beans rinsed and drained
  • 1 cup corn kernels fresh, canned, or frozen
  • 2 cups shredded cheddar cheese or Mexican blend
  • 1 small red onion diced
  • 1 cup cherry tomatoes halved
  • 1 jalapeño sliced
  • 0.5 cup black olives sliced
  • sour cream, salsa, and guacamole for serving

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a skillet. Stir in taco seasoning and cook as directed.
  3. Spread tortilla chips evenly on a foil tray.
  4. Top with beef, beans, corn, onion, and half the cheese. Add another layer of chips and toppings.
  5. Bake for 10–12 minutes until cheese melts.
  6. Garnish with fresh toppings like tomatoes, jalapeños, and olives.
  7. Serve hot with sour cream, salsa, and guacamole.

Notes

You can make these vegetarian by skipping the meat and adding extra beans or roasted vegetables.
