- Rinse jasmine rice thoroughly until water runs clear.
- In a medium pot, combine coconut milk, water, salt, and sugar. Stir to mix.
- Add rinsed rice, stir once, and bring to a boil.
- Reduce heat to low, cover, and simmer for 15–18 minutes until tender and liquid is absorbed.
- Remove from heat and let rest, covered, for 5 minutes.
- Fluff rice with fork, stir in pineapple chunks.
- Top with toasted coconut and parsley/cilantro before serving.
