Ingredients
  

Rice Base
  • 2 cups jasmine rice rinsed
  • 1.5 cups coconut milk unsweetened, full-fat
  • 1.5 cups water
  • 0.5 tsp salt
  • 1 tbsp sugar optional
Mix-ins & Toppings
  • 1 cup pineapple chunks fresh or canned
  • 0.5 cup toasted shredded coconut
  • 2 tbsp fresh parsley or cilantro chopped

Method
 

  1. Rinse jasmine rice thoroughly until water runs clear.
  2. In a medium pot, combine coconut milk, water, salt, and sugar. Stir to mix.
  3. Add rinsed rice, stir once, and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15–18 minutes until tender and liquid is absorbed.
  5. Remove from heat and let rest, covered, for 5 minutes.
  6. Fluff rice with fork, stir in pineapple chunks.
  7. Top with toasted coconut and parsley/cilantro before serving.
