Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together butter and sugar until light and fluffy.
- Add vanilla, flour, and salt; mix until dough forms.
- Roll dough into balls, flatten slightly, and place on baking sheets.
- Bake 12–14 minutes until edges are lightly golden. Cool completely.
- Melt caramels with heavy cream in saucepan until smooth.
- Spoon caramel over each cooled cookie and let set.
- Melt chocolate chips with coconut oil until smooth.
- Spread chocolate over caramel layer.
- Allow chocolate to set before serving or storing.
Notes
For best results, let the caramel layer firm up before adding chocolate.
