Ingredients
  

Shortbread Base
  • 1 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 2 cups all-purpose flour
  • 0.5 tsp salt
  • 1 tsp vanilla extract
Caramel Layer
  • 11 oz soft caramels
  • 2 tbsp heavy cream
Chocolate Topping
  • 2 cups milk chocolate chips or semisweet
  • 1 tbsp coconut oil or shortening optional, for smoother melting

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together butter and sugar until light and fluffy.
  3. Add vanilla, flour, and salt; mix until dough forms.
  4. Roll dough into balls, flatten slightly, and place on baking sheets.
  5. Bake 12–14 minutes until edges are lightly golden. Cool completely.
  6. Melt caramels with heavy cream in saucepan until smooth.
  7. Spoon caramel over each cooled cookie and let set.
  8. Melt chocolate chips with coconut oil until smooth.
  9. Spread chocolate over caramel layer.
  10. Allow chocolate to set before serving or storing.

Notes

For best results, let the caramel layer firm up before adding chocolate.
