Ingredients
  

Pancake Batter
  • 2 eggs separated
  • 2 tbsp milk
  • 0.25 tsp vanilla extract
  • 0.25 cup all-purpose flour
  • 0.5 tsp baking powder
  • 2 tbsp sugar
  • 0.25 tsp cream of tartar or lemon juice optional

Equipment

  • Mixing bowls
  • Hand mixer or whisk
  • Nonstick pan with lid

Method
 

  1. Separate eggs into yolks and whites.
  2. Whisk yolks with milk and vanilla, then mix in flour and baking powder.
  3. Whip egg whites with sugar until stiff peaks form.
  4. Fold egg whites gently into batter.
  5. Cook tall mounds of batter in a covered pan over low heat with steam.
  6. Flip carefully and cook until fully set and fluffy.
