Ingredients
  

Crust
  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter melted
Cheesecake Filling
  • 3 8 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 eggs large
  • 1/2 cup sour cream
  • 2 tbsp cocoa powder
  • 1 tbsp red food coloring
Topping
  • 1/2 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • red fruit sauce for vampire bite effect

Equipment

Method
 

  1. Preheat oven to 325°F (165°C). Combine cookie crumbs, sugar, and melted butter. Press into 9-inch springform pan and bake 10 minutes. Cool.
  2. Beat cream cheese until smooth. Gradually add sugar and vanilla. Beat in eggs one at a time. Stir in sour cream, cocoa, and red food coloring.
  3. Pour filling over crust. Smooth top and bake 50–60 minutes until center is slightly jiggly. Cool completely at room temperature.
  4. Refrigerate at least 4 hours or overnight.
  5. Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
  6. Pipe whipped cream along edge for 'vampire bite'. Drizzle red fruit sauce over cream.
  7. Remove springform pan, slice, and serve.

Notes

For extra dramatic effect, use a darker red fruit sauce and chill cheesecake overnight for easier slicing.
