Method
- Preheat oven to 325°F (160°C). Line a 9x13-inch baking pan with parchment paper.
- Combine graham cracker crumbs with melted butter and press into the bottom of the pan to form crust.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well.
- Stir in vanilla, sour cream, and heavy cream.
- Mix in spices: cinnamon, ginger, cardamom, cloves, and nutmeg.
- Pour batter over crust, smooth top, and bake for 40–45 minutes until set.
- Cool slowly with oven door cracked, then refrigerate 4 hours or overnight.
- Slice, dust with cinnamon, and serve chilled.
