White Cheddar Apple Chicken Chili

Ingredients
  

Chili
  • 2 tablespoons olive oil or butter
  • 1 pound chicken breast diced
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 medium apples peeled and diced
  • 30 ounces white beans drained and rinsed
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 1/2 cups white cheddar cheese shredded
  • salt to taste
  • black pepper to taste

Equipment

Method
 

  1. Brown chicken in oil until lightly golden.
  2. Add onion, garlic, and apples and sauté briefly.
  3. Stir in beans, broth, and spices and simmer.
  4. Add cream and melt in white cheddar before serving.

Notes

Keep heat low when adding cheese to maintain a smooth, creamy texture.
