Ingredients
  

Salad
  • 4 large hard-boiled eggs
  • 1 large avocado diced
  • 1 cup cucumber, chopped
  • 2 tbsp red onion, diced
  • 3 tbsp Greek yogurt plain
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard

Method
 

  1. Chop hard-boiled eggs and place in a bowl.
  2. Add avocado, cucumber, and red onion.
  3. Whisk yogurt, olive oil, lemon juice, mustard, salt, and pepper.
  4. Gently mix dressing into salad and serve.

Notes

Add avocado fresh if meal prepping to prevent browning.
