Ingredients
  

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups elbow macaroni
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Method
 

  1. Brown ground beef in a large skillet with olive oil over medium heat. Drain excess fat.
  2. Add onion and garlic, cook until softened.
  3. Stir in tomato paste, paprika, Italian seasoning, salt, and pepper.
  4. Add diced tomatoes and beef broth, then stir in uncooked macaroni.
  5. Cover and simmer until pasta is tender, 12–15 minutes.
  6. Stir in shredded cheddar until melted and creamy.
  7. Serve hot, garnished with parsley.

Notes

For extra creaminess, add a splash of milk or cream before melting in cheese.
