  • 1.5 cups brown sugar, packed
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.25 cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment paper.
  2. Whisk together butter, brown sugar, and sugar. Add eggs and vanilla.
  3. Stir in flour, baking powder, cinnamon, and salt until combined.
  4. Spread batter evenly in pan. Mix topping sugar and cinnamon; sprinkle on top.
  5. Bake for 25–30 minutes until golden. Cool completely before slicing.
