- Season chicken with salt and pepper.
- Sear chicken in olive oil and butter until golden. Remove and set aside.
- Sauté mushrooms until golden; add garlic and Italian seasoning.
- Deglaze with chicken broth, then stir in cream and Parmesan.
- Add spinach until wilted, then return chicken to skillet.
- Simmer for a few minutes, finish with lemon juice and parsley. Serve warm.
