Ingredients
  

Base
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 boneless skinless chicken breasts
  • salt and black pepper to taste
  • 2 cups mushrooms, sliced cremini or button
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 2 cups fresh spinach
  • 1 tablespoon lemon juice optional
  • fresh parsley for garnish

Method
 

  1. Season chicken with salt and pepper.
  2. Sear chicken in olive oil and butter until golden. Remove and set aside.
  3. Sauté mushrooms until golden; add garlic and Italian seasoning.
  4. Deglaze with chicken broth, then stir in cream and Parmesan.
  5. Add spinach until wilted, then return chicken to skillet.
  6. Simmer for a few minutes, finish with lemon juice and parsley. Serve warm.
