Ingredients
  

  • 1.5 lbs sirloin or flank steak cut into 1-inch cubes
  • 4 large potatoes diced into 1-inch pieces
  • 1 cup shredded cheddar cheese plus extra for topping
  • 0.5 cup shredded mozzarella cheese
  • 6 slices bacon cooked and crumbled
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup beef broth
  • 2 tablespoons olive oil or melted butter
  • 0.5 cup sour cream for serving
  • 2 green onions chopped, for garnish

Method
 

  1. Dice steak and potatoes into 1-inch cubes. Cook bacon until crisp, then crumble.
  2. Layer half the potatoes, steak, onions, garlic, and seasonings in crockpot; add cheese. Repeat layers.
  3. Pour beef broth over mixture and cover.
  4. Cook on LOW 6–7 hours or HIGH 3–4 hours until potatoes are tender and steak is done.
  5. Top with remaining cheese and bacon, cover for 10 minutes to melt.
  6. Serve warm with sour cream and green onions.
