Method
- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
- Cook sausage in a skillet until browned. Leave 2 tablespoons of fat in the pan.
- Sprinkle flour over sausage and stir. Slowly add milk, whisking until thickened. Season with salt and pepper.
- Cut biscuits into quarters. Layer half in the baking dish.
- Pour sausage gravy over biscuits.
- Whisk eggs with seasoning and pour over gravy. Add cheese on top if desired.
- Add remaining biscuits. Bake 35–40 minutes until golden.
- Cool slightly before serving. Garnish with parsley.
